Ingredients

  • 2 cups rolled oats
  • 1/2 cup honey
  • 1/2 cup peanut butter
  • 1/4 cup chopped nuts (almonds, walnuts, or pecans)
  • 1/4 cup dried fruit (raisins, cranberries, or apricots)
  • 1/4 cup chocolate chips
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking dish with parchment paper.
  2. Spread oats and chopped nuts on a baking sheet. Toast in the oven for 10 minutes.
  3. In a saucepan, warm honey and peanut butter over low heat until smooth.
  4. Remove from heat and stir in vanilla and salt.
  5. In a bowl, combine toasted oats, nuts, dried fruit, and chocolate chips.
  6. Pour the honey mixture over the dry ingredients and mix well.
  7. Press the mixture firmly into the prepared baking dish.
  8. Chill in the fridge for 2 hours, then cut into bars.
