Ingredients

  • 3 lbs chuck roast
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 carrots, chopped
  • 4 potatoes, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp thyme

Instructions

  1. Preheat oven to 325°F.
  2. Season chuck roast with salt and pepper.
  3. Heat olive oil in a dutch oven over medium-high heat.
  4. Sear the roast on all sides until browned.
  5. Remove roast and sauté onions, carrots, and garlic for 3 minutes.
  6. Return roast to the pot and add beef broth and thyme.
  7. Cover and bake for 3 hours.
  8. Add potatoes and bake for another hour.
  9. Let rest for 10 minutes before serving.
