Ingredients

  • 200g dark chocolate, chopped
  • 3 large eggs, separated
  • 50g granulated sugar
  • 1 tsp vanilla extract
  • 200ml heavy cream
  • Pinch of salt

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water. Let it cool slightly.
  2. Whisk the egg yolks with half the sugar until pale and thick. Stir in the melted chocolate and vanilla.
  3. In another bowl, whip the heavy cream to soft peaks. Fold it into the chocolate mixture.
  4. In a clean bowl, beat the egg whites with a pinch of salt until foamy. Gradually add the remaining sugar and beat to stiff peaks.
  5. Gently fold the egg whites into the chocolate mixture until fully combined.
  6. Divide the mousse into serving cups and refrigerate for at least 4 hours before serving.
