Description

Ingredients

Scale
  • 200g dark chocolate
  • 4 eggs, separated
  • 50g sugar
  • 200ml heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Melt the dark chocolate in a heatproof bowl over simmering water. Let it cool slightly.
  2. Beat the egg yolks with half the sugar until pale and thick.
  3. Whip the heavy cream with vanilla extract until soft peaks form.
  4. In a clean bowl, beat the egg whites with a pinch of salt until foamy. Gradually add the remaining sugar and beat until stiff peaks form.
  5. Fold the melted chocolate into the egg yolk mixture, then gently fold in the whipped cream.
  6. Carefully fold in the egg whites until fully combined.
  7. Spoon the mousse into individual cups and refrigerate for at least 4 hours before serving.
