- 4 cups shredded zucchini
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup pepperoni slices
- 1/2 cup pizza sauce
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
Instructions
- Preheat oven to 400°F (200°C).
- Mix shredded zucchini, eggs, Parmesan cheese, salt, garlic powder, and Italian seasoning in a bowl.
- Press the mixture into a greased baking dish to form a crust.
- Bake for 20 minutes or until lightly browned.
- Spread pizza sauce over the crust.
- Top with mozzarella cheese and pepperoni slices.
- Bake for another 10 minutes or until cheese is melted.
- Let cool for 5 minutes before serving.
Notes
- Pat dry zucchini before shredding to remove excess moisture.
- Add other pizza toppings like mushrooms or bell peppers if desired.
