Ingredients

- 2 medium zucchinis, spiralized into noodles
- 1 cup cherry tomatoes, halved
- 12 large shrimp, peeled and deveined
- 1/2 cup fresh basil leaves
- 2 tbsp pine nuts
- 2 cloves garlic
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lemon juice
Instructions
- In a food processor, blend basil, pine nuts, garlic, Parmesan, olive oil, salt, and pepper to make the pesto.
- Heat a grill or skillet over medium-high heat. Cook shrimp for 2-3 minutes per side until pink.
- Toss zucchini noodles with pesto in a large bowl.
- Top with grilled shrimp and cherry tomatoes.
- Drizzle with lemon juice before serving.

- Use a spiralizer to create zucchini noodles.
- Add extra Parmesan for a richer flavor.
