This air fryer zucchini recipe results in perfectly crispy and tender zucchini that makes a great side dish or snack.

- 2 medium zucchinis, sliced into rounds or half-moons
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, combine the sliced zucchinis with olive oil, garlic powder, Italian seasoning, salt, and pepper. Toss until the zucchini is evenly coated.
- Place the zucchini in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Air fry the zucchini for 10-12 minutes, shaking the basket halfway through, until they are golden and crispy.
- If desired, sprinkle with grated Parmesan cheese during the last 2 minutes of cooking.
- Once done, remove from the air fryer and serve immediately.
Notes
- For added flavor, you can marinate the zucchini for 30 minutes before air frying.
- Feel free to experiment with different seasonings, such as paprika or cayenne pepper, for a spicy kick.
- Serve with a dipping sauce like ranch or marinara for extra flavor.
