This delicious lemon tart is topped with a fluffy meringue that is lightly toasted for a perfect balance of tart and sweet.

- 1 pre-made pie crust
- 1 cup granulated sugar
- 1/2 cup fresh lemon juice
- 2 tablespoons lemon zest
- 4 large eggs, separated
- 1/4 teaspoon salt
- 1/4 teaspoon cream of tartar
- 1/2 cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- Place the pie crust in a tart pan and bake according to package instructions until golden brown. Allow to cool.
- In a medium mixing bowl, whisk together the sugar, lemon juice, lemon zest, egg yolks, and melted butter until smooth.
- Pour the lemon mixture into the cooled pie crust and bake for 20-25 minutes, or until set. Remove from the oven and let cool.
- In a clean mixing bowl, beat the egg whites and salt until soft peaks form. Gradually add the cream of tartar and continue beating until stiff peaks form.
- Spread the meringue over the cooled lemon filling, making sure to seal the edges.
- Use a kitchen torch or broiler to lightly toast the meringue until golden brown.
- Let the tart cool completely before slicing and serving.
Notes
- Make sure to use fresh lemon juice for the best flavor.
- If you don’t have a kitchen torch, you can use the broiler, but watch closely to prevent burning.
