Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 4 large eggs, separated
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the pie crust in a tart pan and bake according to package instructions until golden brown. Allow to cool.
  3. In a medium mixing bowl, whisk together the sugar, lemon juice, lemon zest, egg yolks, and melted butter until smooth.
  4. Pour the lemon mixture into the cooled pie crust and bake for 20-25 minutes, or until set. Remove from the oven and let cool.
  5. In a clean mixing bowl, beat the egg whites and salt until soft peaks form. Gradually add the cream of tartar and continue beating until stiff peaks form.
  6. Spread the meringue over the cooled lemon filling, making sure to seal the edges.
  7. Use a kitchen torch or broiler to lightly toast the meringue until golden brown.
  8. Let the tart cool completely before slicing and serving.
