- 500g prawns, peeled and deveined
- 2 tbsp yellow curry paste
- 400ml coconut milk
- 1 tbsp fish sauce
- 1 tbsp palm sugar
- 1 red bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pan over medium heat. Add garlic and onion, sauté until fragrant.
- Add yellow curry paste and stir for 1 minute.
- Pour in coconut milk and bring to a simmer.
- Add fish sauce and palm sugar, stir well.
- Add prawns and red bell pepper, cook until prawns turn pink (about 5 minutes).
- Garnish with fresh cilantro and serve hot.
