Ingredients

- 4 cups mixed winter greens (kale, spinach, arugula)
- 1 cup roasted butternut squash, cubed
- 1/2 cup pomegranate seeds
- 1/4 cup crumbled feta cheese
- 1/4 cup walnuts, chopped
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Toss butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
- In a large bowl, combine mixed greens, roasted squash, pomegranate seeds, feta cheese, and walnuts.
- Whisk together remaining olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine.
- Serve immediately.
Notes
- Swap walnuts with pecans for a different crunch.
- Add grilled chicken for extra protein.
- Store leftovers in an airtight container for up to 2 days.
