Ingredients

  • 1 cup roasted butternut squash, cubed
  • 1/2 cup pomegranate seeds
  • 1/4 cup crumbled feta cheese
  • 1/4 cup walnuts, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F. Toss butternut squash with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
  2. In a large bowl, combine mixed greens, roasted squash, pomegranate seeds, feta cheese, and walnuts.
  3. Whisk together remaining olive oil, balsamic vinegar, salt, and pepper.
