Ingredients

- 2 cups mixed greens
- 1 cup roasted butternut squash, diced
- 1/2 cup pomegranate seeds
- 1/4 cup walnuts, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Roast butternut squash for 25 minutes until tender.
- In a large bowl, combine mixed greens, roasted squash, pomegranate seeds, walnuts, and feta.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle the dressing over the salad and toss gently.
- Serve immediately.
