Ingredients

- 1 lb ground turkey
- 1 cup diced bell peppers
- 1 cup diced onion
- 6 large eggs
- 1 cup almond milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup spinach, chopped
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook ground turkey until browned.
- Add bell peppers and onion to the skillet, cooking until soft.
- In a bowl, whisk together eggs, almond milk, garlic powder, onion powder, salt, and pepper.
- Stir in the cooked turkey mixture and spinach.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the eggs are set.
Notes
- Store leftovers in the fridge for up to 3 days.
- This casserole can be made ahead and reheated.
- Feel free to add other Whole30 compliant vegetables.
