Ingredients

- 1 lb ground turkey
- 1 cup diced bell peppers
- 1 cup chopped spinach
- 8 large eggs
- 1/2 cup coconut milk
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the ground turkey until browned.
- Add bell peppers and spinach, cooking until softened.
- In a bowl, whisk together eggs, coconut milk, garlic powder, onion powder, salt, and pepper.
- Combine meat and vegetable mixture with the egg mixture.
- Pour into a greased baking dish.
- Bake for 30-35 minutes or until the eggs are set.
- Let cool slightly before slicing and serving.

- Store leftovers in the refrigerator for up to 4 days.
- This casserole can be frozen for up to 2 months.
