Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 500g cream cheese
  • 150g white chocolate, melted
  • 100g caster sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 150ml double cream

Instructions

  1. Preheat oven to 160°C.
  2. Crush biscuits and mix with melted butter. Press into a tin.
  3. Beat cream cheese, sugar, and vanilla until smooth.
  4. Add melted white chocolate and mix well.
  5. Whisk in eggs one at a time.
  6. Fold in double cream gently.
  7. Pour mixture over the biscuit base.
  8. Bake for 40 minutes until set but slightly wobbly.
  9. Cool completely before refrigerating for 4 hours.
