- 200g digestive biscuits
- 100g unsalted butter, melted
- 500g cream cheese
- 150g white chocolate, melted
- 100g caster sugar
- 2 eggs
- 1 tsp vanilla extract
- 150ml double cream
Instructions
- Preheat oven to 160°C.
- Crush biscuits and mix with melted butter. Press into a tin.
- Beat cream cheese, sugar, and vanilla until smooth.
- Add melted white chocolate and mix well.
- Whisk in eggs one at a time.
- Fold in double cream gently.
- Pour mixture over the biscuit base.
- Bake for 40 minutes until set but slightly wobbly.
- Cool completely before refrigerating for 4 hours.
