Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 3 cups chicken broth
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 can (4 oz) diced green chilies
  • 1 cup corn (fresh, frozen, or canned)
  • Salt and pepper to taste
  • 1/2 cup sour cream
  • 1/4 cup cilantro, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 5 minutes.
  2. Add the chicken breasts to the pot, along with cumin, chili powder, oregano, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
  3. Pour in the chicken broth, and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
  4. Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  5. Stir in the white beans, diced green chilies, and corn. Simmer for an additional 10 minutes.
  6. Finally, stir in the sour cream until fully combined. Adjust seasoning with salt and pepper, if needed.
  7. Serve hot, garnished with chopped cilantro.
