A delicious and hearty white chicken chili that’s perfect for any occasion.

- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano
- 3 cups chicken broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup corn (fresh, frozen, or canned)
- Salt and pepper to taste
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 5 minutes.
- Add the chicken breasts to the pot, along with cumin, chili powder, oregano, salt, and pepper. Cook for about 5 minutes, stirring occasionally.
- Pour in the chicken broth, and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the chicken is cooked through.
- Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
- Stir in the white beans, diced green chilies, and corn. Simmer for an additional 10 minutes.
- Finally, stir in the sour cream until fully combined. Adjust seasoning with salt and pepper, if needed.
- Serve hot, garnished with chopped cilantro.
