Ingredients

  • 2 cups dried white beans
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 green bell pepper, diced
  • 2 carrots, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups vegetable broth
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • Salt to taste
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions

  1. Soak the white beans overnight in water.
  2. Drain and rinse the beans.
  3. In a large pot, heat olive oil over medium heat.
  4. Add onion, garlic, bell pepper, and carrots. Sauté until softened.
  5. Add soaked beans, diced tomatoes, vegetable broth, cumin, chili powder, and salt.
  6. Bring to a boil, then reduce heat to a simmer.
  7. Cook for 1.5 to 2 hours or until beans are tender.
  8. Serve hot, garnished with fresh cilantro.
