Ingredients

- 2 cups dried white beans
- 1 onion, diced
- 3 cloves garlic, minced
- 1 green bell pepper, diced
- 2 carrots, diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups vegetable broth
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- Salt to taste
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- Soak the white beans overnight in water.
- Drain and rinse the beans.
- In a large pot, heat olive oil over medium heat.
- Add onion, garlic, bell pepper, and carrots. Sauté until softened.
- Add soaked beans, diced tomatoes, vegetable broth, cumin, chili powder, and salt.
- Bring to a boil, then reduce heat to a simmer.
- Cook for 1.5 to 2 hours or until beans are tender.
- Serve hot, garnished with fresh cilantro.
Notes
- Can substitute canned beans for quicker preparation.
- Adjust spices to your taste.
- Serve with cornbread for a complete meal.
