- 1 lb ground beef
- 1 cup chopped onion
- 2 cloves garlic, minced
- 1 can diced tomatoes (14 oz)
- 1 can kidney beans (15 oz), drained
- 1 packet taco seasoning
- 2 cups shredded cheese
- 6 tortillas
Instructions
- In a large skillet, cook ground beef over medium heat until browned.
- Add onion and garlic; cook until onion is soft.
- Stir in diced tomatoes, kidney beans, and taco seasoning.
- Simmer for 10 minutes.
- Preheat oven to 350°F.
- Layer tortillas, meat mixture, and cheese in a baking dish.
- Bake for 20 minutes until cheese is melted.
- Serve hot.

- Use ground turkey for a lighter option.
- Add bell peppers for extra flavor.
- Can be made vegetarian by using beans only.
