Ingredients

- 2 pounds of chicken breasts
- 1 cup of diced carrots
- 1 cup of diced potatoes
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken broth
- 1 teaspoon of salt
- 1 teaspoon of pepper
- 1 teaspoon of dried thyme
- 1 tablespoon of olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Sear chicken breasts until golden brown.
- Place chicken in the crockpot.
- Add carrots, potatoes, onion, and garlic on top of the chicken.
- Pour chicken broth over the ingredients.
- Season with salt, pepper, and thyme.
- Cover and cook on low for 6-8 hours.
- Shred chicken before serving.
Notes
- Serve with crusty bread.
- Store leftovers in the fridge for up to 3 days.
- Freeze any extra portions for later.
