Easy and delicious weeknight dinners made in a crockpot.
Ingredients

- 1 pound chicken breasts
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 cup bell pepper, chopped
- Salt and pepper to taste
Instructions
- Place chicken breasts at the bottom of the crockpot.
- Add diced tomatoes and chicken broth.
- Stir in chopped onion, garlic, Italian seasoning, and bell pepper.
- Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 4 hours.
- Shred chicken before serving.
Notes
- Serve over rice or pasta.
- Can substitute chicken with beef or tofu.
- Freeze leftovers for later use.
