A refreshing and simple salad combining sweet watermelon with fresh mint and a tangy lime-honey dressing.
Ingredients

- 4 cups watermelon, cubed (about half a medium watermelon)
- 1/2 cup fresh mint leaves, chopped
- 2 tablespoons lime juice (freshly squeezed)
- 1 tablespoon honey (or to taste)
Instructions
- Cut the watermelon into bite-sized cubes and place in a large mixing bowl.
- Rinse, dry, and finely chop the mint leaves. Add to the bowl with the watermelon.
- In a small bowl, mix lime juice and honey until dissolved.
- Drizzle the dressing over the watermelon and mint. Toss gently to coat.
- Serve immediately, garnished with whole mint leaves if desired.
Notes
- For added texture, sprinkle with crumbled feta cheese or toasted nuts.
- Best enjoyed fresh but can be refrigerated for a few hours (may release juice).
