Ingredients

  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup vegetable oil or melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, beat the eggs and then add the milk, oil (or melted butter), and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; it’s okay if there are a few lumps.
  5. Lightly grease the waffle iron with cooking spray or brush with oil.
  6. Pour the appropriate amount of batter onto the preheated waffle iron (usually about 1/2 to 3/4 cup, depending on your iron). Close the lid and cook until golden brown, usually about 5 minutes.
  7. Carefully remove the waffle and repeat with the remaining batter.
  8. Serve warm with desired toppings.

Notes

  • For extra fluffy waffles, separate the eggs and beat the egg whites until stiff peaks form. Fold them into the batter just before cooking.
  • You can add chocolate chips, blueberries, or nuts directly into the batter for variation.
