  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic. Sauté until softened.
  3. Add bell pepper, carrot, and zucchini. Cook for 5 minutes.
  4. Stir in black beans, kidney beans, crushed tomatoes, chili powder, and cumin.
  5. Bring to a boil, then reduce heat. Simmer for 30 minutes.
  6. Season with salt and pepper.
  7. Serve hot.
