  • 1/2 cup red onion, diced
  • 1/2 cup bell pepper, diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and let sit for 5 minutes, then fluff with a fork.
  2. In a large bowl, combine black beans, corn, cherry tomatoes, avocado, red onion, bell pepper, and cilantro.
  3. Add the cooked quinoa to the bowl of vegetables.
  4. Drizzle with lime juice and olive oil, then sprinkle with cumin, chili powder, salt, and pepper.
  5. Toss gently to combine all ingredients, adjusting seasoning if necessary.
