- 2 cups vegetable broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until liquid is absorbed. Remove from heat and let sit for 5 minutes, then fluff with a fork.
- In a large bowl, combine black beans, corn, cherry tomatoes, avocado, red onion, bell pepper, and cilantro.
- Add the cooked quinoa to the bowl of vegetables.
- Drizzle with lime juice and olive oil, then sprinkle with cumin, chili powder, salt, and pepper.
- Toss gently to combine all ingredients, adjusting seasoning if necessary.
- Serve immediately or refrigerate for up to 2 days.
