Ingredients

- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, rinsed
- 1 cup corn, frozen or fresh
- 1 bell pepper, diced
- 1 avocado, sliced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a large bowl, mix black beans, corn, and bell pepper.
- Once quinoa is cooked, fluff with a fork and add to the bowl.
- Drizzle with olive oil and sprinkle cumin and salt.
- Mix well and top with avocado and cilantro.
Notes
- Serve warm or cold.
- This dish is great for meal prep.
- You can add other vegetables as desired.
