Ingredients

  • 1 cup corn, frozen or fresh
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and vegetable broth.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. In a large bowl, mix black beans, corn, and bell pepper.
  5. Once quinoa is cooked, fluff with a fork and add to the bowl.
  6. Drizzle with olive oil and sprinkle cumin and salt.
  7. Mix well and top with avocado and cilantro.
