- 1 bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 1 cup mushrooms, whole or halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the bell pepper, zucchini, red onion, cherry tomatoes, and mushrooms.
- Drizzle with olive oil, garlic powder, oregano, salt, and pepper. Toss to coat the vegetables evenly.
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the vegetables onto the skewers, alternating between different types.
- Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and serve warm.
