Ingredients

  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 1 cup mushrooms, whole
  • 1 cup firm tofu, cubed
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a large bowl, combine olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper.
  3. Add the vegetables and tofu to the bowl and toss until everything is well coated.
  4. Thread the vegetables and tofu onto skewers, alternating between different items for a colorful presentation.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  6. Remove from the grill and serve hot.

Notes

  • Feel free to use any seasonal vegetables you have on hand.
  • For extra flavor, marinate the skewers in the oil and vinegar mixture for 30 minutes before grilling.
  • If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
