- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 1 cup cherry tomatoes
- 1 cup mushrooms, whole
- 1 cup firm tofu, cubed
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine olive oil, balsamic vinegar, garlic powder, oregano, salt, and pepper.
- Add the vegetables and tofu to the bowl and toss until everything is well coated.
- Thread the vegetables and tofu onto skewers, alternating between different items for a colorful presentation.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
- Remove from the grill and serve hot.
Notes
- Feel free to use any seasonal vegetables you have on hand.
- For extra flavor, marinate the skewers in the oil and vinegar mixture for 30 minutes before grilling.
- If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
