Ingredients

- 1 cup chickpeas, drained and rinsed
- 1 teaspoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 medium zucchinis, sliced
- 1 tablespoon balsamic vinegar
- 1 teaspoon Italian seasoning
- 1 red bell pepper, chopped
- 1 cup broccoli florets
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a bowl, combine chickpeas, olive oil, paprika, garlic powder, salt, and pepper. Toss to coat evenly.
- Place the seasoned chickpeas in the air fryer basket and cook for 10 minutes, shaking halfway through.
- In another bowl, toss zucchini slices with balsamic vinegar and Italian seasoning.
- Add zucchinis to the air fryer basket and cook for an additional 8 minutes.
- Add red bell pepper and broccoli florets to the basket and cook for another 5-7 minutes until all vegetables are tender and slightly crispy.
- Remove all ingredients from the air fryer and serve warm.
