Ingredients

  • 2 medium zucchinis, sliced
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Italian seasoning
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a bowl, combine chickpeas, olive oil, paprika, garlic powder, salt, and pepper. Toss to coat evenly.
  3. Place the seasoned chickpeas in the air fryer basket and cook for 10 minutes, shaking halfway through.
  4. In another bowl, toss zucchini slices with balsamic vinegar and Italian seasoning.
  5. Add zucchinis to the air fryer basket and cook for an additional 8 minutes.
  6. Add red bell pepper and broccoli florets to the basket and cook for another 5-7 minutes until all vegetables are tender and slightly crispy.
  7. Remove all ingredients from the air fryer and serve warm.
