- 500g beef chunks
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 3 garlic cloves, minced
- 4 cups beef broth
- 2 cups water
- 2 potatoes, cubed
- 1 cup green beans, trimmed
- 1 can diced tomatoes
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- Heat a large pot over medium heat. Add the beef chunks and brown on all sides.
- Add the onion, garlic, carrots, and celery. Cook until the vegetables are softened.
- Pour in the beef broth and water. Add the potatoes, green beans, diced tomatoes, salt, pepper, thyme, and bay leaf.
- Bring the soup to a boil, then reduce the heat and simmer for 45 minutes.
- Remove the bay leaf and serve hot.
Notes
- You can use frozen vegetables if fresh ones are not available.
- Adjust the seasoning according to your taste.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
