Ingredients

  • 4 large sweet potatoes, peeled and cubed
  • 1/4 cup maple syrup
  • 1/4 cup coconut milk
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup rolled oats
  • 1/2 cup chopped pecans
  • 2 tbsp coconut oil, melted
  • 1 tbsp brown sugar

Instructions

  1. Preheat oven to 375°F.
  2. Boil sweet potatoes until tender, about 15 minutes.
  3. Drain and mash sweet potatoes with maple syrup, coconut milk, cinnamon, nutmeg, and salt.
  4. Spread mixture in a baking dish.
  5. Mix oats, pecans, coconut oil, and brown sugar in a bowl.
  6. Sprinkle topping over sweet potatoes.
  7. Bake for 20 minutes until golden brown.
