Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, mix pumpkin puree, coconut oil, brown sugar, and vanilla extract.
  3. In another bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  4. Combine wet and dry ingredients until just mixed.
  5. Drop spoonfuls of dough onto the baking sheet, spacing them 2 inches apart.
  6. Bake for 12-15 minutes or until edges are lightly golden.
  7. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
