Description

A delicious vegan version of the classic crispy chicken Caesar sandwich.


Ingredients

  • 1 cup chickpeas, mashed
  • 1/2 cup breadcrumbs
  • 1/4 cup nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 4 slices of whole grain bread
  • 2 cups romaine lettuce, chopped
  • 1/2 cup vegan Caesar dressing
  • Vegan cheese slices (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix mashed chickpeas, breadcrumbs, nutritional yeast, garlic powder, onion powder, salt, and pepper.
  3. Form the mixture into patties.
  4. Bake the patties for 25 minutes, flipping halfway through.
  5. Toast the bread slices in the oven for a few minutes.
  6. Spread vegan Caesar dressing on each slice of bread.
  7. Add the baked patties on top of the dressing.
  8. Top with romaine lettuce and vegan cheese if desired.
  9. Close the sandwich and serve immediately.
