Description
A delicious vegan version of the classic crispy chicken Caesar sandwich.
Ingredients

- 1 cup chickpeas, mashed
- 1/2 cup breadcrumbs
- 1/4 cup nutritional yeast
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 4 slices of whole grain bread
- 2 cups romaine lettuce, chopped
- 1/2 cup vegan Caesar dressing
- Vegan cheese slices (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix mashed chickpeas, breadcrumbs, nutritional yeast, garlic powder, onion powder, salt, and pepper.
- Form the mixture into patties.
- Bake the patties for 25 minutes, flipping halfway through.
- Toast the bread slices in the oven for a few minutes.
- Spread vegan Caesar dressing on each slice of bread.
- Add the baked patties on top of the dressing.
- Top with romaine lettuce and vegan cheese if desired.
- Close the sandwich and serve immediately.
Notes
- Feel free to adjust spices according to your taste.
- Pair with a side salad for a complete meal.
- Store leftovers in an airtight container in the fridge.
