Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of diced carrots
- 1 cup of chopped celery
- 1 cup of chopped bell peppers
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- Salt to taste
- Pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a large pot, bring the vegetable broth to a boil.
- Add the quinoa and reduce the heat to low.
- Cover and simmer for 15 minutes.
- In a separate pan, sauté the carrots, celery, and bell peppers until soft.
- Add the sautéed vegetables to the quinoa.
- Stir in the thyme, rosemary, salt, and pepper.
- Cook for an additional 5 minutes.
- Serve warm.
