Ingredients

  • 4 cups of vegetable broth
  • 1 cup of diced carrots
  • 1 cup of chopped celery
  • 1 cup of chopped bell peppers
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a large pot, bring the vegetable broth to a boil.
  3. Add the quinoa and reduce the heat to low.
  4. Cover and simmer for 15 minutes.
  5. In a separate pan, sauté the carrots, celery, and bell peppers until soft.
  6. Add the sautéed vegetables to the quinoa.
  7. Stir in the thyme, rosemary, salt, and pepper.
  8. Cook for an additional 5 minutes.
  9. Serve warm.
