Ingredients

- 2 cups of quinoa
- 4 cups of vegetable broth
- 1 cup of chopped carrots
- 1 cup of chopped celery
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of dried thyme
- 1 teaspoon of dried rosemary
- 1 cup of chopped mushrooms
- 1 cup of green beans, trimmed
- 1/4 cup of olive oil
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a large pot, combine quinoa and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add carrots, celery, and mushrooms, cook until tender.
- Stir in thyme, rosemary, salt, and pepper.
- Add green beans and cook for an additional 5 minutes.
- Combine vegetable mixture with quinoa.
- Serve warm and enjoy.
