- 4 medium sweet potatoes
- 1 cup cooked black beans
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Bake sweet potatoes for 45 minutes or until tender.
- Let them cool for a few minutes, then cut them in half lengthwise.
- Scoop out the flesh into a bowl, leaving a small border.
- Add black beans, cheese, sour cream, garlic powder, cumin, salt, and pepper to the bowl.
- Mash the mixture until smooth and well combined.
- Stuff the potato skins with the mixture.
- Return to the oven and bake for another 15 minutes.
- Serve warm and enjoy.
