Description
Twice baked sweet potatoes are a delicious and nutritious dish. They are creamy on the inside and have a crispy exterior.
Ingredients

- 4 medium sweet potatoes
- 1 cup Greek yogurt
- 1/2 cup shredded cheese
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork.
- Place the sweet potatoes on a baking sheet and bake for 45-60 minutes until tender.
- Let the sweet potatoes cool slightly, then cut them in half lengthwise.
- Scoop out the flesh into a bowl, leaving a small border.
- Add Greek yogurt, cheese, green onions, olive oil, salt, and pepper to the bowl and mix well.
- Fill the potato skins with the mixture.
- Bake for an additional 15-20 minutes until heated through.
Notes
- You can add bacon bits for extra flavor.
- Try using different types of cheese.
- These can be made ahead and reheated.
