Description
Delicious twice baked potatoes stuffed with cheese and herbs.
Ingredients

- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup milk
- 1/4 cup green onions, chopped
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork.
- Bake the potatoes for about 45 minutes until tender.
- Let the potatoes cool slightly, then cut them in half lengthwise.
- Scoop out the insides into a bowl, leaving a thin layer in the skin.
- Add cheese, sour cream, milk, green onions, salt, and pepper to the bowl.
- Mash the mixture until smooth and well combined.
- Stuff the potato skins with the mixture.
- Return the stuffed potatoes to the oven and bake for another 15 minutes.
Notes
- Use your favorite cheese for different flavors.
- These can be made ahead and reheated.
- Top with extra cheese or bacon bits if desired.
