Description

Delicious twice baked potatoes stuffed with cheese and herbs.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 cup green onions, chopped
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork.
  3. Bake the potatoes for about 45 minutes until tender.
  4. Let the potatoes cool slightly, then cut them in half lengthwise.
  5. Scoop out the insides into a bowl, leaving a thin layer in the skin.
  6. Add cheese, sour cream, milk, green onions, salt, and pepper to the bowl.
  7. Mash the mixture until smooth and well combined.
  8. Stuff the potato skins with the mixture.
  9. Return the stuffed potatoes to the oven and bake for another 15 minutes.
