  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach

  • 1/4 tsp black pepper
  • 1 tsp dried oregano
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté for 30 seconds.
  3. Place salmon fillets in the skillet, skin-side down.
  4. Sprinkle salt, pepper, and oregano over the salmon.
  5. Cook for 4-5 minutes per side until golden.
  6. Remove salmon and set aside.
  7. Add cherry tomatoes and spinach to the skillet.
  8. Sauté for 2-3 minutes until spinach wilts.
  9. Return salmon to the skillet.
  10. Sprinkle Parmesan cheese and drizzle lemon juice.
  11. Serve immediately.
