- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons ketchup
- 2 tablespoons grated fresh ginger
- 2 cloves garlic, minced
- 1 tablespoon rice vinegar
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1/4 cup chopped fresh cilantro (for garnish)
Instructions
- Preheat your oven to 375°F (190°C).
- In a saucepan, combine pineapple juice, soy sauce, brown sugar, ketchup, ginger, garlic, rice vinegar, and red pepper flakes.
- Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
- In a small bowl, mix cornstarch and water, then stir into the sauce.
- Cook for 2 more minutes until the sauce thickens.
- Place chicken breasts in a baking dish and pour half of the sauce over them.
- Bake for 25 minutes, then brush with remaining sauce.
- Bake for another 10-15 minutes until chicken reaches 165°F internal temperature.
- Garnish with fresh cilantro before serving.
Notes
- For extra caramelization, broil for 2-3 minutes at the end.
- Substitute chicken thighs if you prefer dark meat.
- Double the sauce for extra to serve with rice.
- Marinate chicken in half the sauce for 1-2 hours for deeper flavor.
