- 2 cups mixed dried fruits
- 1 cup unsalted butter
- 1 cup brown sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 cup chopped nuts
- 1/4 cup brandy or orange juice
Instructions
- Preheat your oven to 325°F (160°C).
- Grease and line a round cake pan.
- In a bowl, mix dried fruits with brandy or orange juice and let soak for at least an hour.
- Cream together butter and brown sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Sift together flour, baking powder, cinnamon, and nutmeg.
- Gradually add flour mixture to the butter mixture.
- Fold in the soaked fruits and chopped nuts.
- Pour the batter into the prepared pan.
- Bake for 1.5 to 2 hours or until a toothpick comes out clean.
- Let cool before serving.
Notes
- This cake improves with age; make it a few weeks before Christmas.
- Store in an airtight container to keep it moist.
- You can decorate with marzipan and icing if desired.
