- 200g shrimp, peeled and deveined
- 200g squid, cleaned and sliced
- 200g white fish fillets, cut into chunks
- 4 cups chicken or seafood stock
- 2 stalks lemon grass, chopped
- 5–6 kaffir lime leaves
- 3–4 Thai bird’s eye chilies, smashed
- 200g mushrooms, sliced
- 1 medium tomato, cut into wedges
- 1 onion, sliced
- 2–3 tablespoons fish sauce
- 1 tablespoon lime juice
- Cilantro for garnish
Instructions
- In a pot, bring the chicken or seafood stock to a boil.
- Add the lemon grass, kaffir lime leaves, and bird’s eye chilies. Let it simmer for about 5 minutes to infuse the flavors.
- Add the onion and mushrooms to the pot and cook for another 3-4 minutes.
- Next, add the shrimp, squid, and fish. Cook until the seafood is cooked through, about 4-5 minutes.
- Stir in the fish sauce and lime juice. Adjust seasoning to taste.
- Remove from heat and garnish with cilantro before serving.
Notes
- For a spicier version, add more bird’s eye chilies or use chili paste.
- Feel free to substitute other seafood based on your preference.
- Serve with steamed rice for a complete meal.
