Ingredients

- 4 large ripe tomatoes, diced
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced tomatoes, cucumber, and red onion.
- Add the chopped basil and parsley to the bowl.
- In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for 10 minutes to allow the flavors to meld.
- Serve chilled or at room temperature.
