Ingredients

  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 cans (14.5 oz each) crushed tomatoes
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sauté for another 1-2 minutes until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, dried basil, and sugar. Bring to a simmer and cook for 15-20 minutes.
  4. Using an immersion blender, blend the soup until smooth. (Alternatively, you can transfer the soup to a blender in batches.)
  5. Stir in heavy cream and season with salt and pepper to taste. Heat through for another 5 minutes.
  6. Serve hot, garnished with fresh basil.
