A creamy and delicious tomato bisque that is perfect for a comforting meal.
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 cans (14.5 oz each) crushed tomatoes
- 1 cup vegetable broth
- 1 cup heavy cream
- 1 teaspoon dried basil
- 1 teaspoon sugar
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for another 1-2 minutes until fragrant.
- Stir in crushed tomatoes, vegetable broth, dried basil, and sugar. Bring to a simmer and cook for 15-20 minutes.
- Using an immersion blender, blend the soup until smooth. (Alternatively, you can transfer the soup to a blender in batches.)
- Stir in heavy cream and season with salt and pepper to taste. Heat through for another 5 minutes.
- Serve hot, garnished with fresh basil.
