Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Add softened butter and mix until the mixture resembles coarse crumbs.
- Beat in eggs one at a time, followed by buttermilk and vanilla extract.
- Fold in pumpkin puree until just combined.
- Pour the batter into the prepared pan and spread evenly.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool before serving.
Notes
- Store leftovers in an airtight container at room temperature for up to 3 days.
- For extra flavor, top with cream cheese frosting.
- Substitute buttermilk with 1 cup milk mixed with 1 tbsp lemon juice if needed.
