Ingredients

  • 2 boneless, skinless chicken breasts, sliced
  • 1 tbsp vegetable oil
  • 1/4 cup peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 clove garlic, minced
  • 1/2 tsp ginger, grated
  • 1/4 tsp red pepper flakes
  • 4 large tortillas
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 2 tbsp chopped cilantro
  • 2 tbsp chopped peanuts

Instructions

  1. Heat oil in a pan over medium heat. Cook chicken until no longer pink, about 5-7 minutes.
  2. In a bowl, whisk together peanut butter, soy sauce, honey, lime juice, garlic, ginger, and red pepper flakes.
  3. Add the sauce to the cooked chicken, stirring to coat evenly.
  4. Warm the tortillas in a dry pan for 10 seconds on each side.
  5. Divide the chicken mixture among the tortillas.
  6. Top with cabbage, carrots, cilantro, and chopped peanuts.
  7. Roll up the tortillas tightly and serve.
