Ingredients

  • 1 lb chicken breast, sliced
  • 1 can (14 oz) coconut milk
  • 2 tbsp Thai red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat oil in a pot over medium heat. Add onion and garlic, sauté until soft.
  2. Add Thai red curry paste, stir for 1 minute.
  3. Pour in coconut milk and chicken broth, bring to a simmer.
  4. Add chicken, cook for 10 minutes until done.
  5. Stir in fish sauce, brown sugar, and lime juice.
  6. Add bell pepper, cook for 3 minutes.
  7. Garnish with cilantro before serving.
