A flavorful Thai coconut curry chicken dish with rich spices and creamy coconut milk.

- 1 lb boneless chicken breast, sliced
- 1 can (14 oz) coconut milk
- 2 tbsp red curry paste
- 1 tbsp vegetable oil
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 1/2 cup fresh basil leaves
- 1 lime, juiced
Instructions
- Heat oil in a pan over medium heat.
- Add onion and bell pepper, sauté for 3 minutes.
- Stir in curry paste and cook for 1 minute.
- Add chicken and cook until browned, about 5 minutes.
- Pour in coconut milk, fish sauce, and brown sugar. Simmer for 10 minutes.
- Stir in basil and lime juice before serving.
Notes
- Adjust spice level with more or less curry paste.
- Serve with jasmine rice for a complete meal.
