Ingredients

  • 1 lb boneless chicken breast, sliced
  • 1 can (14 oz) coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp vegetable oil
  • 1 onion, sliced
  • 1 red bell pepper, sliced
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1/2 cup fresh basil leaves
  • 1 lime, juiced

Instructions

  1. Heat oil in a pan over medium heat.
  2. Add onion and bell pepper, sauté for 3 minutes.
  3. Stir in curry paste and cook for 1 minute.
  4. Add chicken and cook until browned, about 5 minutes.
  5. Pour in coconut milk, fish sauce, and brown sugar. Simmer for 10 minutes.
  6. Stir in basil and lime juice before serving.

Notes

  • Adjust spice level with more or less curry paste.
  • Serve with jasmine rice for a complete meal.
