- 1 lb boneless chicken breast, cut into bite-sized pieces
- 1 can (14 oz) coconut milk
- 1 cup fresh basil leaves
- 2 cups jasmine rice
- 1 red bell pepper, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tbsp fish sauce
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tbsp vegetable oil
- 1 lime, cut into wedges
- Salt to taste
Instructions
- Cook jasmine rice according to package instructions, adding curry powder and turmeric to the water.
- Heat vegetable oil in a pan over medium heat. Sauté onion, garlic, and ginger until fragrant.
- Add chicken pieces and cook until browned.
- Pour in coconut milk and fish sauce. Simmer for 10 minutes.
- Add red bell pepper and basil leaves. Cook for another 5 minutes.
- Serve the chicken over spiced rice with lime wedges on the side.
Notes
- Use full-fat coconut milk for a richer flavor.
- Adjust the spice level by adding more or less curry powder.
- Garnish with extra basil leaves for freshness.
