- 2 lbs pork ribs
- 1 tbsp olive oil
- 2 tbsp barbecue rub
- 1 cup barbecue sauce
- 8 oz elbow macaroni
- 2 cups cheddar cheese, shredded
- 1 cup milk
- 2 tbsp butter
- 4 cups fresh spinach
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Preheat oven to 275°F (135°C).
- Coat ribs with olive oil and rub with barbecue seasoning.
- Place ribs on a baking sheet and bake for 2.5 hours.
- Boil macaroni according to package instructions, drain, and set aside.
- In a saucepan, melt butter, add milk and cheese, then stir until smooth.
- Mix cheese sauce with cooked macaroni.
- Sauté spinach with garlic in a pan for 3-4 minutes.
- Brush ribs with barbecue sauce and broil for 5 minutes.
- Serve ribs with mac and cheese and sautéed spinach.
Notes
- Let ribs rest for 10 minutes before slicing.
- Adjust barbecue sauce to your preference.
- Use fresh spinach for best results.
