Ingredients

  • 2 lbs pork ribs
  • 1 tbsp olive oil
  • 2 tbsp barbecue rub
  • 1 cup barbecue sauce
  • 8 oz elbow macaroni
  • 2 cups cheddar cheese, shredded
  • 1 cup milk
  • 2 tbsp butter
  • 4 cups fresh spinach
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 275°F (135°C).
  2. Coat ribs with olive oil and rub with barbecue seasoning.
  3. Place ribs on a baking sheet and bake for 2.5 hours.
  4. Boil macaroni according to package instructions, drain, and set aside.
  5. In a saucepan, melt butter, add milk and cheese, then stir until smooth.
  6. Mix cheese sauce with cooked macaroni.
  7. Sauté spinach with garlic in a pan for 3-4 minutes.
  8. Brush ribs with barbecue sauce and broil for 5 minutes.
  9. Serve ribs with mac and cheese and sautéed spinach.

Notes

  • Let ribs rest for 10 minutes before slicing.
