Ingredients

  • 500g ground beef or lamb
  • 1 small onion, finely grated
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 1 cup chicken or vegetable broth
  • 1/4 cup fresh lemon juice
  • 1 tbsp cornstarch (optional, for thickening)

Instructions

  1. In a bowl, mix ground meat, onion, garlic, egg, breadcrumbs, parsley, oregano, salt, and pepper.
  2. Shape the mixture into small meatballs, about 1 inch in diameter.
  3. Heat olive oil in a pan over medium heat. Brown the meatballs on all sides, then remove from the pan.
  4. In the same pan, add broth and lemon juice. Bring to a simmer.
  5. Return meatballs to the pan and cook for 10-12 minutes, until fully cooked.
  6. If desired, mix cornstarch with a little water and stir into the sauce to thicken.
  7. Serve hot with rice, bread, or a fresh salad.
