- 2 chicken breasts, boneless and skinless
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup heavy cream
- 2 tbsp Dijon mustard
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup chicken broth
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a skillet over medium heat.
- Season chicken with salt and pepper, then cook for 5-6 minutes per side until golden. Remove and set aside.
- In the same skillet, sauté onion and garlic until softened.
- Add mustard, thyme, and chicken broth, stirring to combine.
- Pour in heavy cream and simmer for 2-3 minutes.
- Return chicken to the skillet and cook for another 5 minutes until heated through.
- Garnish with parsley and serve hot.

- Use whole-grain mustard for extra texture.
- Add a splash of white wine for depth of flavor.
- Serve with mashed potatoes or steamed vegetables.
